Cooking involves a great knowledge of reality and a positive spirit for the elements. It also requires that the conditions of the personality are wide awake.

To know the rules, to dominate them and to familiarize oneself with them and to be able to transgress them.

Next to a well done dish, the best texts of immortal authors are weak; the best musical compositions seem poor and dull. My apologies, I want to say that a well done dish allows you to deduce all the pleasures of one page, of a painting, of a melody.

One dish, a good dish, is the most complex work of art.
